Our family-owned farms are located in Colorado. Our cows spend their summers in the foothills of Cañon City and their winters on the plains of Manzanola.

Custom Bulk Beef Orders
11. How much beef will I get?
The amount varies based on live weight and processing choices. Here’s an estimate:
- ¼ Beef → ~180 lb hanging weight → ~117-126 lb packaged
- ½ Beef → ~360 lb hanging weight → ~234-252 lb packaged
- Whole Beef → ~720 lb hanging weight → ~468-504 lb packaged
12. What does "hanging weight" mean?
Hanging weight is the weight of the carcass after slaughter, before aging, deboning, and trimming. This is what you are charged for.
13. Will my beef be aged before processing?
Yes! Our beef is dry-aged for improved flavor and tenderness before processing.
14. How do I choose my cuts?
You will submit a custom cut sheet to the processor 30 days before butchering. You choose steak thickness, roast sizes, and other customizations.
15. What if I don’t know how to fill out a cut sheet?
We’re happy to provide guidance, or the processor can help you select the most common options.
16. What processing fees should I expect?
Processing fees are paid directly to the processor:
- ¼ or ½ Beef: ~$1.60/lb hanging weight
- Whole Beef: ~$1.40/lb hanging weight
17. Can I get my beef in vacuum-sealed packaging?
Yes! Most processors offer vacuum-sealed packaging as a standard option. Vacuum sealing extends freezer life by preventing freezer burn and maintaining flavor. Properly vacuum-sealed beef can stay in peak condition for 24+ months.
18. What happens if I don’t pick up my beef on time?
The processor may charge storage fees or dispose of the beef if it is not picked up. You are responsible for timely pickup.
19. Can I change my cut sheet after submitting it?
No. Once your cut sheet is submitted, it cannot be changed, so please review it carefully.
20. What if I don’t like the taste or texture of my beef?
Beef flavor and texture can vary by animal. We do not guarantee specific taste preferences, as each cow is unique.
